Beef Steak Fajitas

Fillet, skirt or sirloin, get perfectly marinated beef every time!
Makes 4 servings

- 250ml Clamato Tomato Cocktail
- 700g Beef - we used Skirt steak sliced into thin strips
- 1 Onion
- 2 Bell peppers

- 1/2 tsp Cayenne
- 1 tsp Cumin
- 1 tsp Garlic powder
- 1 tsp Paprika
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1 Lime


- Mix garlic powder, cumin, paprika, cayenne, salt and clamato in a bowl
- Add the beef strips to the bowl, put bowl into fridge and leave to marinade for 30 mins
- Thinly slice onions & peppers
- Heat frying pan with oil on medium/high heat. Fry onion in a pan for 3-4 minutes or until translucent
-  Add bell peppers and fry for 1-2 minutes
- Get marinade from the fridge and discard marinade, add beef to pan and cook for 8 minutes, until beef is cooked
- Squeeze lime over the top

- Season with salt and black pepper
- Serve with rice or tortillas
