Chicken Tacos

Be the Taco the town!
Makes 9 servings (2 tacos each)

Ingredients:

Meat Filling:


-2 tbsp olive oil
- 1kg cooked chicken, shredded
- 250ml Clamato®
- 2 tsp oregano, dried
- 2 tsp ground cumin
- 2 tsp salt
- 1 tsp black pepper, coarsely ground
- 18 hard taco shells

Topping:

- 250g lettuce, shredded
- 200g cheddar cheese, shredded
- 2 tomatoes, diced
- 1 medium red onion, diced
- 30g cup black olives, sliced
- 1 jalapeño, diced
- 200ml Mexican cream (optional)
- 200ml Mexican sauce (optional)

Method:
- Preheat oven to 180°C.
- In a large skillet over medium-high heat, heat olive oil and add chicken.
- Cook 10 minutes.
- Add Clamato, oregano, cumin, salt, and pepper; cook 10 more minutes.
- Place taco shells in oven and bake 5-7 minutes.
- For tacos, place 2 tablespoons chicken, cheese, tomatoes, onion, olives, jalapeño, and lettuce in each taco.
- Top with sauce and cream. Serve immediately.
